Fruit on Cakes

When candied peel, cherries or almonds are cooked on top of a large eako for decorative purposes, it is disappointing to find, on taking the cake from the oven, that the fruits have sunk to the bottom while cooking. To avoid this, and to make sure that bho fruits will stay as arranged, dredgo the top of tho uncooked cake lightly with sugar. Then put on tho candied peel, cherries, or almonds, and they will remain in position when cooking. To prevent the icing from running down the sides of a cako the top should be sprinkled with flour. This will “hold” tho icing.
