PINEAPPLE MARMALADE Two large pineapples, fibs sugar, 24 pints of water, 2oz. of preserved ginger. Peel and shred the fruit; sprinkle 2 cups, of sugar over it and let it stand overnight. Meanwhile boil the skins with the water and simmer for one. hour. Strain and make up the quantity to 14 pints. In the morning add to the shredded pineapple, bring to the boil and simmer slowly for one hour. Add the rest of the sugar and when it is dissolved boil briskly for about twenty minutes. Meanwhile add the ginger cut in small pieces. Test a little on a plate to sec if it will “jell.’’ If not, boil longer.
