TO-DAY'S RECIPE
MARMALADE. Tim is a beautiful recipe for marmalade, which has been well tested and found very satisfactory. Cut finely eight Seville oranges (or Poorman oranges) and four lemons. Soak overnight in six pints of water. Boil tho inixturo until tender and then add lOlbs. of Brewer’s crystals and boil till it jells. STRAWBERRY JAM. Strawberry jam will set better if lemon juice is added, or a proportion of gooseberries. Add two tablcspoonfuls of lemon juice to each pound, or £lb. of gooseberries, previously put through the mincer, to every 31b of strawberries. DRIED APRICOT JAM. Two pounds dried apricots, Jib's, sugar, 4 quarts water. Soak the apricots for 2-1 hours in tho water. Boil for half an hour. Add the sugar and boil again till a little jells in a saucer. This makes about 121bs. of jam.
