CHRYSTABEL PUDDING. One and a-half cups of selfraising flour, and rub in this three tablespoons of clear beef dripping. Then add half a cup of sugar, three-quarters of a cup of currants, raisins and sultanas, half teaspoonful nutmeg. Mix with hot milk till the mixture is just thin enough to drop off the spoon. Steam li hours, covered with greased paper. Serve with -sauce made as follows: Put four tablespoons of sugar into a small saucepan with two of water. Oook slowly until the sugar is dissolved, then let it boil until the sugar is a brown toffee. Lift from the fire and pour over it water sufficient to make three-quarters of a cup of liquid. Then thicken with maizena and water.
