TO-DAY’S RECIPE SALMON CROQUETTES.

One tin of salmon, two eggs, one and one-third cups of hreadcrumhs, four tablesponß milk, four tablespoons melted butter, salt and pepper, a pinch of mace. Drain the fish and mash fine, add one egg beaten, the butter melted, and breadcrumbs in order given. Beat till soft, then put a small spoonful into the other egg (beaten), lay it in cracked dust (or bread crumbs) and shape into a cylinder. Fry in deep, smoking hot fat, until a delicate brown, drain on soft paper and serve very hot.
