NUT CUTSETS. Chop 2oz. of cooked macaroni finely and put 2oz. of any kind of butter or margarine, and Make a sauce with loz. each of btuter or margarine, and flour, and one gill of milk. Stir in the macaroni and nuts, season well, and add the beaten yolk of an ogg. Stir over the fire for a few minutes, then turn on to a plate to cool. Shape into cutlets, brush over with the slightly / whipped white of the egg, dip in breadcrumbs, and fry golden brown in hot fat. Drain well, and insert a small piece of uncooked ‘ macaroni in the pointed end of each cutlet to simulate a bone. Garnish with fried parsley.
