TO-DAY’S RECIPE

SPICED PLUMS. Ingredients: 41b. plums, 21b. brown sugar, half-pint brown vinegar, 2in. cinnamon stick, six or eight cloves, a little whole allspice. Tie the spices in muslin, put them into a saucepan with the vinegar and sugar, and boil together until a thickish syrup is formed. Remove all stalks from the plums, wipe them with a clean cloth, and prick each one with a silver fork. Put them into a basin, pour the boiling syrup over them, cover, and leave for three days, stirring occasionally. Then strain off the liquid and reboil until a rich syrup is again formed. Put the plums into this, and bring them to boiling point. Seal down in hot jars. This is a kind of cross between a jam and a pickle, and it forms a welcome novelty.
