TARANAKI DAIRYING

SUCOESSS OP LABORATORY. EXPERIMENTAL ACTIVITY. It was a very Important step that was taken when the Federation of Dairy Factories was formed in Ha.vera to embrace all the factories of the district. A meeting of the executive was held on Saturday afternoon, when amongst other matters wore discussed the laboratory, the relative values of milk and different breeds, inferior milk supply, effect of varying temperature on cheese, coal supplies from Ohura, method of election to Dairy Control Board, motion pictures of tho indus. try. The use made of the laboratory by the district factories was shown In the report of the scientist in charge (Mr. P. O. Veale). Members of tho exo cutlve expressed themselves as more than satisfied with tho progress made and the increasing use made by fnc. tories of the valuable services of the scientist. Tho efficiency of tho work at the laboratory was stressed by the manner in which inferior milk supplied at one factory was traced to one supplier, and now the. investigation would go further and by means of testing all the cows in the herd the trouble would be traced down to particular animals. This proved very markedly the practical value of the institution. In regard to temperature necessary In choose for shipment abroad, attention was drawn to the fact that, in order to assure that the cheese was landed at the ship’s side at the cor. rect temperature of 45 degrees, it was (essential that the chciese must be cooled at the factory to a point con. siderably below that figure. This would counteract the effect of handling from lorries and on coastal boats. Members pointed out that freezing was detrimental to quality in cheese and the question was raised ,b,s to whether even this suggested lowering of temperature might not be harmful. It was resolved to conduct investigations in the matter.
