Arnold, says : It will greatly add to Ihepiwitij of flavor m the cheese and hence will enhance the value of the great mass of cheese made ia this oountry. E. G. Jenkins, of Marksbury Vale, near Bristol, England, son-in-la^r, of and successor to. the late Joseph Habdino, the celebrated Chedder Cheese Mak&r, says i "We think the Rennet Extract a first rate article and a boon to all cheese-makers. The use of it is spreading rapidly m the dairy districts of this country and it has only to be tried to be appreciated. We may yet add that Dr Sciiatz mann, President of the Swiss Experimental Dairy Station, m a recent treatise on " The Preparation and use of Rennet for Cheesemaking," remarks : In the direction of ehee«eina,kittg, the most important step m advance is the production of a pure extract of' calf rennet that can always be depended upon, and is not liable to spoil by keeping. It has beei) brought into the market by Chr. Hansen, of Copenhagen and its value is best proved by its rapidly increasing consumption. FKOM AUSTRALIA. We qnote from a letter received from the experienced Dairyman, Mr Hardii*&, New South Wales .- "We have made about 450 tons of cheese at Boclalla., without one failure, and wherever U is used once, \t (Chr. I have u;rd it entirely during the past two seasons, and so long as I can g*t your Extract, T shall use no other. I have found it to be the one thing needful m the successful manufacture of cheese, as I can always rely upon ifc as being uniform m strength. — Yours truly, Johh M'JLbows." From the renowned checsemaker.C. B. Candy, who took first prize at Canrerhury Agricultural Show, we have received the following : — " Halswoll, Canterbury, 29th October, 1880—1 have great pleasure m testifying that I have used Chr Hansen's Rennet Exa-act and Cheese Coloring during the last twelve months, and have feund them to givo entire satisfaction. I consider the introduction of these preparations a boon to c'leesemakers, and can with canfidence recoinnieud them. — Chablus B. Canpy." " We testify to the above being a true copy of the original, signed ia our presence. — Black, Davies, & Co." WARNING. Dairymen should be on their guard that thoy obtain the genuine article as a number of inferior imitations of our .Hornet Extract are at present offered for sale. CHR. HANSEN'S LIQUID CHEKSE-COLOEING.
