DANISH BUTTER.
The arrival of 1000 tons of Danish butter in London is a matter of considerable interest to the trade. Reference to its early despatch was made recently. Its quality now has been tested and it has been found not equal to pre-war standards, a fact that is not likely to cause surprise as the butter appears to have been stored for some considerable time. The early marketing of Danish butter after manufacture prior to the war was always an important factor in its disposal in Britain, as it did not possess the same keeping qualities of butter from the Southern Hemisphere. The Germans appear to have treated the Danes more liberally than the Dutch, whose live-stock were taken in considerable numbers to feed their enemy or to reinforce herds in the Reich. The fact that Denmark’s herds did not suffer to any appreciable extent suggests the early resumption of heavier shipments once shipping becomes reasonably good and foodstuffs can be procured for tiding herds over the •winter. In fact, the Danes expect to have an exportable surplus of 37,000 tons of butter between May and October, but no surplus during the winter. The speed with which production can be stepped up both in Denmark and Holland will be reflected in an improved outlook in Europe. The Dutch, however, have very considerable problems to overcome before their economy- is restored, but they are tackling them with the vigour of thenrace, a witness to this being the manner in which the inundated areas are being restored.
