SPONGE FINGERS.

Beat the yolks of 4 eggs with 4oz castor sugar until thick. Beat the whites with a pinch of salt until stiff and fold into yolks alternately with 3oz plain Hour sifted three or four times. Add vanilla to ta6te if liked. Butter a baking tray and sprinkle lightly with flour. Place sponge in a forcing bag made cone shape with greaseproof paper and force out into finger lengths a little apart. Sprinkle with icing sugar or castor sugar and hake in a moderate oven for about 10 minutes.
