ENTERTAINING HINTS.
If you entertain infrequently it is difficult to know what quantities of food to purchase for a large party. Here, are some hints on quantities that are well worth retaining for reference : One 21b sandwich loaf will cut into thirty-six slices, making eighteen rounds of sandwiches, which can be cut into seventy-two small triangles or squares.. Half a pounc] of butter is sufficient to spread a 21b loaf of bread for sandwiches.
Half a pound of meat, cut thin, will provide fillings for sandwiches for a 21b loaf.' Six eggs, boiled, shelled and made into a paste with pepper and salt, and a dab of butter, will provide sufficient filling for sandwiches cut from a 21b loaf. One quart of jelly is sufficient for 12 small seryjngs. The usual size sandwich (about nine inches across) will cut into fourteen slices.
One-quarter pound of coffee, with two gallons of water, is sufficient for fifty people. One gallon of hot milk will be adequate for the milk requirements for the same number, since many people prefer black coffee.
