A RECIPE.

POTATOES A LA DUCHESSE. One pound of mashed potato, one ounce of butter, one ounce of grated cheese, the yolk of two small eggs, salt, pepper, nutmeg. Melt the butter in a saucepan, put in the potato, one beaten yolk and cheese, and mix all well together over the fire. Season the mixture to taste with salt, pepper and a dust of nutmeg. Shape the mixture in pieces about three inches long, and oiie and a-half wide, and about a-quarter. of an inch thick. Mark the tops in a lattice pattern with the back of a knife; brush them over with the other beaten yolk, put the pieces on a greased baking tin and bake them a delicate brown.
