VITAMINS.

(To the Editor.) Sir,—Dr.. Williams’s letter in Thursday’s “standard” was very cheering in parts, but i am sure there are many harassed mothers who will wish lie had given tne vitamin B essentials. From an authority J quote: “Human loud tails into the following definite classes, (a) proteins, in meat, fish, eggs, milk, clieese, the gluten of wheat, and legumen of peas and beaus, .(b) hats, butter, cream, codliver oil. (c) Carbohydrates, sugars and starches in cane sugar, etc., and potatoes, sago, tapioca, wheat, oats, barley and rice, (d) Salts, in fruits, especially apples, oranges • and. lemons . . . Vitamin A is necessary for growth and found in milk, butter, yolk of eggs, and green vegetables. Vitamin B is essential for the maintenance ot nervous stability and is present in the germ of wheat, cereals, peas and beans. Vitamin C is in fresh vegetables, especially lettuce and fruit. Vitamin D is in fisli, codliver oil, yolk of eggs, etc., and is essential for proper development of bone and teeth . . . From all this it is plain that food should be varied and balanced. Ihe authority also states: “Meat, butter, cheese and bread contain only certain of the classes mentioned, but milk contains them all, and is therefore a niore or less perfect food, while eggs, which are deficient only in carbohydrates, form another valuable article of diet.” Everyone, of course, should know that plenty of fresh water is also necessary. As I lieaid someone remark on reading Dr. Williams’s letter, “but how are we to know vitamin B, etc.?” I hope this may be of use to some.—l am, etc., INTERESTED.
