A RECIPE.
RICH PLUAI PUDDING. lib flour, lib breadcrumbs, 21b shredded suet, lib sugar, If lb sultanas, lib currants, 31b mixed peel, lib stoned raisins, 1 small carrot, fib peeled chopped apples, 4 teaspoons baking powder, f grated nutmeg, 2oz ground almonds, 1 gill milk, 6 eggs, 2 lemons, f teaspoon mixed spice, and spirits, if liked. Clean sultanas and currants and dry well, put raisins through mincer, measure ancl •. sieve flour with baking powder, spice and grated nutmeg. Rut shredded suet on to a sheet of paper and cover with breadcrumbs. Put flour and fruit into a mixing howl and mix well, add sugar and almonds and mix again. Chop peel and apples and add, then grate in lemon, strain and add juice. Add suet and breadcrumbs and grated carrot. Bent eggs and add to mixture, and lastly add milk and spirits. Grease a large basin well and put mixture in, or cook in cloth. Steam for 8 hours, and again for If or 2 hours on day of use.
