A RECIPE.
RICH FRUIT CAKE. Take 6oz each flour, butter, and castor sugar, Boz each sultanas, currants, and raisins, 4oz mixed chopped peel, four eggs, one teaspoon baking powder, half good teaspoonful each ground ginger, ground cloves, and ground cinnamon, one tablespoon ground almonds, and a pinch of salt. Method.—Beat well the sugar and butter to a cream, add the eggs, one at a time, well beaten, Mix the fruit, spice, almonds, and baking powder w : .ili the sifted fionr and salt. Divide this mixture into two parts and add to the butter mixture, mixing carefully, and not beating it in. Line a cake tin with double greaseproof paper and bake in a slow oven for 2J to 3 hours. If a large cake is required, double the quantity and bake for 3) to 4 hours.
