‘pear and raistn charlotte

Slice some tinned pears into small pieces. To a breakfastcupful allow £ cupful seedless raisins, 1 tablespoonful granulated gelatine, £ teaspoonful vanilla, pinch of salt, 1 egg white, 1 cupful of milk, and £ cupful of sugar. Clover the raisins with cold water and bring to the boil, drain and cool. Soften the gelatine in 2 tablespoonsful pear juice, set over boiling water and stir until dissolved. Add gradually the milk, pears, raisins, vanilla, salt and the egg beaten stiff with the sugar. Heap into a glass dish and serve when quite cold.
