COOLING SUMMER DRINKS.

Orange Syrup.—Squeeze the juice from sweet oranges and strain it. To every pint of juice add lflb. of sugar and the juice of one lemon. Boil very slowly, and skim as long as scum rises. Then bottle and cork securely. Use two tablespoonfuls of syrup to each glass of water. These syrups are nice for making sauces or fillings and flavouring icings. Lemon Cordjal.—Put lib. sugar, one pint water, one teaspoonful citric acid, and few drops yellow colouring into an enamel pan; place pan on fire and bring water to the boil. Boil for 6 minute§. Take oS, add one teaspoonful essence lemon. Bottle and cork securely. Add 2 tablespoonfuis of this to each glass of water. Pineapple Cordial. —Prepare as for lemon, adding one teaspoonful essence of pineapple in the place of lemon essence. Cereal Coffee.—Two cupfuls bran, one cupful treacle, one cupful ground rice one cupful oatmeal, one cupful ground maize, one cupful wneatmeal. Mix all the ingredients well together. Put into a shallow tin and place in a very moderate oven. Stir frequently. Bake until a dark coffee colour. When cold store in air-tight tins.
