FILLETS OF FISH WITH BANANAS.

Wash and wipe dry four fdlets of any white fish, place in a buttered dish, peel two bananas and cut in halves lengthwise; lay a slice of banana on each fillet. Melt soz of butter in a saucepan, remove the skin from two tomatoes, add these to the butter and mash with a fork; cook without browning. Mix a teaspoonful of cornflour to a smooth paste with a gill of water and add to the tomato puree; stir until boiling; season with salt and pepper and pour over the fish. Cover with buttered paper and bake in a moderate oven 15 minutes. Servo from the dish.
