These rules for making better coffee come from a leading expert connected with one of the largest importers of coffee in England: Always use rain water or soft water. Measure the water as well as the coffee. The proportions should be a heaped dessertspoonful to each after-dinner cup. Guessing means poor coffee. Do not waste fresh coffee by adding it to okl grounds. Coffee grounds once used can no more make coffee than ashes can build a fire. Do not boil coffee. It kills the flavour and makes it bitter. Use freshlyboiled water only.

This is the best and simplest way to make coffee: Put your freshlyground coffee into an earthenware pot; pour in a measured quantity of freshlyboiled water; allow it to stay two minutes. Do not stir or shake. Then strain through a muslin folded to five thicknesses, pour into the coffee pot, and serve instantly.
