F ACTORIES FAVOUR BUTTER AT OUTSET.
“The general opinion in dairying circles is,” remarked a gentleman intimately 7 connected with the industry, to a ‘ Standard representative, to-day, “that butter will be a better proposition than cheese for factories at the commencement of the new season, and will remain so until the end of September.” Our informant added that local factories, fitted with a dual plant, and whose mainstay was cheese, were accordingly arranging to manufacture butter when they reopened after the present recess. “As for ihe remainder of the season, he continued, “there is a consensus of opinion among factories that cheese will pay them better than butter —that is after the end of September—and they are making their plans accordingly.”
