Butter Making.
In the course of an address delivered by the Hon. Harris Lewis, of Frankfort New York, before the Ontario Dairyman's Asaociation, he suggested the usa of " paraffin paper" for packing butter, as being cleaner and cheaper than muslin and at the same time airtight. A corres* pondent of an Amerian agricultural con* temporary gives the following method of packing butter for keeping or for transit : — After churning aud well working the sak into the butter with as little handling as possible, then set the butter iaway m a proper place for twelve or twenty-four hours. The salt become dissolved, the butter changes color and condi ion, and then very little pres* sure will bring it into a dry, solid, waxy texture. Next pack the butter solid into tuba, properly prepare 1, putting a cloth over the top, and over that spreading a paste of salt. There being but little moistute, the salt on the surface does not dissolve, but crystallises, and will remain almost intact throughout the season. Place a close ficting cover on to the tub and set m a pioper place for keeping, and •it need not be opened until it reaches th a . consumer. J3
