Mr. Henschell, the eminent musician, has recently been expressing his views on singing. He says that present-day 3lnglng is characterised by terrible mediocrity, and that far too many people are taking to .music nowadays. "If," he remarks, " I had done nothing else in my lite but discourage aspirants I should iconslder that I had not lived In vain.** Rice Cheese Cakes. Ijine patty-paus with. puff-paste, put into each a small teaspoonful of raspberry jam, .and coyer with the curd made as follows :—Melt 2oz. of butter in, a basin, beat up with it 4oz. of sugar, the same quantity of ground rice, the grated rind of half a lemon, and two well-beaten eggs.- Mix till all is a stiff paste. .Bake the cheesecakes to a golden colour, and serve cold on a d'oyley.
