BUTTER IN AMERICA.
The San Francisco Chronicle reports from Sacramento that farmers in the Sacramento Valley who are get- ' ting from frve to eight cents less a pound for butter under the new tariff ( 'than they, did under the Republican administration are not enthusiastic over the, working of the Underwood Bill. 'When the mail left extra butter w t as quoted on the San Francisco market ""at .28 1 cents a pound;,.loth January 1913, 'that isame quality'of' butter "was 3^ cents ajpfcund, and on' the' like date of .X 912 it wasi soaring peaoi&fully>>^ 35£ cents., - 0 to one of the largest butter dealers in Sacramento, this decljiie in the price oVer previous years is due entirely to the importations of the product from New Zealand and Australia, iAt the Ontario Dairymen's Conference held on l^ih January reference was made fco the absence. of uniformity in the flavor^ texture; and pack of Canadian butter,/ Which was resulting in the loss of reputation by the makers of Western Ontario. Mr I. W. Steinhoff said "Western Ontario seems content* to allow other provinces to make better butter and to put it up in more -stylish form." He added: "The best lesson for you men is to go and take a look at the samples of stylishly packed New Zealand butter, of which so much is now coming into Canada." On 28th January best butter was selling in Chicago at 32 cents (Is 4d) per pound. New Zealand competition had brought down the price of the local article to a slight extent. The standards for butter importations into the United States of America have now been fixed under the Pure Food Act of that country. The-maximum of moisture allowed, is 16 per cent., while the fat minimum is 82.5 per cent. The moisture standard is the same as for the Commonwealth, but the fat percentage is 5.5 per cent, higher, and" it is important for exporters to note the higher percentage
required under the United States law.
