DATE CUSTARD

Dates have a high caloric value, and should not be forgotten at this time of the year when, there is not a great variety of fresh fruit. They may be made into a good custard in the following way. Scald two cupfuls of milk and pour over it two tablespoonfuls of cornflour which has been mixed to a cream with a little cold milk. Return the cornflour mixture to the pan and allow it to boil, stirring well. Then draw th pan on one side, still stirring well, and alloty it to cook or 15 minuted. Beat two eggs lightly, add a pinch of '"salt and half a cupful of sugar, and then the hot cornflour mixture gradually. Return to the pan, cook for a minute or two, add dates and half a teaspoonful of vanilla essence. Pour into a glass dish and serve cold.
