PASTEURISED MILK.

The statement made by tb© House Surgeon of the Christchurch Hospital to a representative of this journal' with regard k to the matter we mentioned yesterday, will clear away any doubts that may have existed in the public mind as to the attitude of the staff of the institution towards pasteurised milk. Our reporter merely, quoted from the statement .of the Chairman of the Board, and it now appears that when summarising the remarks of the medical officer that; gentleman was labouring under a misapprehension. What the House Surgeon wished to insist upon waa that if pasteurised milk were selected the Board should satisfy itself that the process would be carried out carefully and effectively. Such a precaution is, of course, eminently necessary, for a public institu-, tion that deals with the sick; and aged ought to have the purest possible articles of food. . It would be wise, too, for the proprietors of pasteurising plants to satisfy the public that their methods are clean and expeditious, and , that the benefits derived from the heating process are not lost by careless cooling and distribution. It is unfortunate that the attitude of themedical staff should have been misunderstood, particularly as the misunderstanding led to the rejection of a lender for a supply of pasteurised milk, but it will be satisfactory for the public to learn, even, at this late hour, that the local experts are not in direct opposition to the conclusions of the most, distinguished of their professional brethren.
