—Specially wkitten By— MISS AMY MONRO SANDWICHES AJiD HOW TO MAKE THEJfI. PART 11. SARDINE SANDWICHES. Ingredients : —Thin bread and butter, sardines, mustard, vinegar, salt and pepper. Method. —Remove the oil from the sardines, skin and bone them. Mix in a basin with a littlo mustard, vinegar, salt and pepper to taste. Prepare the bread and buttor, spread this mixture evenly over, and cover with another slice. Trim neatly, cut as desired. Garnish with sprigs of parsley. CUCUMBER SANDWICHES. Ingredients : —Thin white or brown bread and butter, salt, pepper, lettuce and cucumber, vinegar. Method.—Peel and slice the cucumber, sprinkle with salt, cover, stand for a few hours, drain, then sprinkle slightly with vinegar and pepper. Arrange between the slices of bread, with a lettuce leaf between. Trim neatly and servo. TOMATO SANDWICHES. Use same ingredients and make in the same way as previous recipe, substituting tomatoes for the cucumbers. The tomatoes must be scalded and skinned before slicing ; a littlo mustard may be mixed with the butter. Trim. Serve, and garnish with sprigs of parsley. ANCHOVY SANDWICHES. Ingredients : —Slices of thin brown bread and butter, mustard and cress, anchovies, parsley. Method.—-Wash and bone the anchovies, chop the mustard and cress finely. Arrange on slices of bread, place the anchovies on it; cover with another slice, press firmly together; trim neatly. Arrange on a dish, garnished with parsley. CHEESE SANDWICHES. Ingredients : —Thin slices of bread and butter, cheese, salt, pepper, mustard, and a little vinegar. Method.—Crate the cheese, mix the mustard with a little vinegar, add to the cheese, also the salt and pepper. Have the mixture about the consistency of thick cream, and spread this evenly over the thin slices of brown or white bread and buffer, Cover, trim neatly, cut into triangles, and arrange neatly on a dish. The cheese may be cut into very thin slices, spread over it a thin layer of the mustard, vinegar, pepper and salt mixture, and place between the slices of bread. I
