THE POTATO.

POTATOES AU GRATIN. Mash left-over cooked potatoes and season with salt and pepper. Add beaten egg, half a teacup of grated cheese, an ounce of butter and mix well. Stir in a cup of thick white sauce and place in a greased pie-dish. Sprinkle with grated cheese and cook lightly. POTATO SAUTE.

Cut raw or cooked potatoes into quarter inch slices and dip into a thin batter. Drop in boiling fat and turn when browned on one side. Drain on while paper and sprinkle with a little finely chopped parsley.

SAVOURY POTATO PIE. Ingredients: Six potatoes, two onions, stick of celery, half pound mince meat, dessertspoon chopped parsley, thyme, tablespoon butter, salt and pepper, pastry. Method: Chop onions and celery and mix with minced meat. Put a layer in pie dish and cover with a layer of sliced potatoes. Sprinkle with salt, pepper, parsley thyme, and repeat process until dish is full. Pour vegetable water or meat stock, and cover with pastry. Bake one and a-half hours. Nut meat can be used in place of mince. POTATO AND CHEESE BALLS. Ingredients: Two cups hot mashed potatoes, tablespoon finely chopped parsley, three-quarters of a cup of grated cheese, egg, tablespoon onion juice, salt and pepper to taste. Method: Beat the egg well and mix all the ingredients together and form into balls. Roll them in breadcrumbs and place on baking dish. Cook in moderate oven until golden brown, or balls may be fried golden brown by immersing in smoking hot oil or fat. Minced nuts are a very good substitute for the cheese.

POTATO AND TOMATO PIE. Ingredients: Six potatoes, two large tomatoes, three tablespoons oatmeal, two onions, ounce of butter, salt and pepper. Method: Scald and skin tomatoes and slice potatoes and onions. Place layer and dish and then layer of tomatoes. Repeat until dish is full. Brown the oatmeal on a baking dish in oven and sprinkle with salt, pepper, parsley, or other seasonings into dish. Drop knobs of butter, cover with pastry and bake an hour.
