HAVE YOU EVER TRIED THIS?
When making a dish of kidneys (or lamb chops) try cooking them, dotted with butter, in a casserole and flavouring them with mint. Use fresh mint from the garden, but dried, will do; sprinkle it over the kidneys a minute or two before, removing the dish from the oven. A good suggestion for a diabetic patient’s lunch, or for anyone who likes mint sauce with lamb but cannot take vinegar or sugar. *. * * * Keep handy an oatmeal or a 71b s.r. flour-bag and put all scraps of wool in it; it is surprising how quickly it is filled. Six of these bags sewn together make a nice cot quilt, or they can be collected until’ you have enough for a quilt of any size. # * * * ■ Place prepared vegetables—carrots, onions and potatoes—in a deepcasserole, sprinkle with salt and pepper and pour a cupful of water over. Put chump-chops on top, cover closely and cook two hours in slow oven.
* * * * As an enclosure in soldiers’ parcels of foodstuffs, particularly for the lads in the Middle East, boil hard some very fresh eggs (say 20 minutes) and when cold cover them
w ell with melted paraffin wax. Pack in a tin with bran between the eggs, include a packet of salt and pepper and seal with adhesive tape. This good nourishing food is greatly appreciated. * * * * These baked and stuffed onions are nice for tea: Peel fairly large white onions and remove centres. Mince finely a small tart apple with some sausage-meat, grated cheese and nutmeg. Fill onions with mixture, put in ibaking-dish with a little dripping and cook till tender and brown, basting well. * * * * •To avoid that inartistic droop thread cross-the-window net curtains on elastic instead of tape; they will always hang trim and straight.
