REASONS -FOR ITS VALUE MOST NEARLY PERFECT FOOD “ Far back in history man recognised milk as being" of particular value in . his food supply, and, groping blindly for the reason, he attributed it to a gift from the mythological gods,” states one of the booklets received by the secretary of the Waikato Winter Show Association, Mr W. H. Paul, in -connection with the health and fitness exhibit at the 1930 show. ■“However, the accumulating knowledge of scientists has been gradually blazing the way to the real reasons for its great food value. It is only within the space of our own generation that it has been possible to follow the path from its beginning to our own .doorstep. “Although man secures and uses freely the transformed soil materials as they are found in the body of plant or animal, it is from milk that these materials are available in the highest form, thereby placing milk in its position of being man’s most nearly perfect food.” The booklet from which this extract is taken is one of an interesting series issued by the Dairy Council of America, in which the story of milk, from the time its component parts rest in the ground until it is delivered to the consumer, is told in an easily readable form. A number of fine reproductions showing the effects of malnutrition through the lack of milk, and also illustrating the. various phases in the handling of the commodity are contained in the book.
