TOMATOES AND BACON.

When tomatoes are to be served with fried bacon the bacon should be cooked first, by itself, and then kept on a hot dish in the oven until the tomatoes are ready. If the two are cooked together the bacon absorbs moisture from the tomatoes and becomes sodden and unappetising. Kidneys should also be cooked separately before they are served with bacon. If fried they are usually dry and hard, but much better results may be obtained if the kidneys are laid on small rounds of toast or bread and cooked in the open between two plates or in a fireproof dish with a close-fitting lid. They should be basted once or twice with a little butter or bacon fat.
