THE CHEESE SECTION

"Bigger," brighter, better than ever" were the remarks passed hy an expert, whose candid display of optimism was certainly merited, oiie must admit (says tlie Waikato Times), after doing tiie rounds in the butter and cheese section. The judges were truly in raptures at the quality of our cheese, which has almost reached the maximum in that connection. Eleven prizes out of twenty-two went to cheese produced in the Auckland province. The maximum points recorded were 95a- out oi the possible 100. A standard has been attained which is indeed an enviable one. Pasteurisation, an almost generally adopted process in connection with the dairying production of the province, has been a material factor towards the success.
