BUTTER AND CHEESE.
MR ALLEN INTERVIEWED
•I TILEOBitPH —PRESS ASSORT ATI is AUCKLAND, June 5. In an interview at Auckland, the Hon. Jas. Allen, Minister of Finance, expressed^ regret that some of the cheese from New Zealand was not arriving in first-class condition in London, and that there were also complaints about the quality of New Zealand butter. These racts have been well known to those engaged in the dairy produce export trade, but are perhaps not generally known. A reporter who made some enquiries locally to-day was informed that the complaints regarding shipments of New Zealand cheese had been frequent. As a matter of fact, some of the cheese exported did not grade as first-class when shipped. Tt was, in tho. opinion of the gentleman interviewed, a great mistake for secondclass cheese to be exported. New Zealand cheese had obtained a good reputation on the London market, and it was highly important that that reputation should be maintained. The matter could be remedied, for to some extent it was due to faults in the manufacture. The first lot shipped might be second grade, but there was time to remedy matters before more was shipped. The changeable weather experienced and the drought in the North Island were largely responsible for the inferior quality of the cheese exported n and faulty manufacture had something to do with it. As to the New Zealand butter sent Home, the complaints were not so serious, and'some of the North Island butter had been very favorably commented on.
