BUTTER AND CHEESE-MAKERS'.
ANNUAL MEETING
Tho annual meeting of the New Zealand Factory Butter and Cheesemakers 1 Association, was held on. Wednesday evening at Palmereton North, when a u umber of interesting papers were read and discussed.
The first paper read was "The Coloring of Cheese," by Mr J. A. Kinsella. Ho pointed out that there was a great difference between cool and ordinary curing, the former having reference to the process gone through at a temperature of from 55 to 60 degrees. He described the methods in use in Caauda and said that New Zealand might with advantage take a' lesson from them. The ad .vantage of the cool process was that by it a cheeso of a mild flavor could be produced and a great deal of shrinkage can be avoided. "Chemistry of Butter and Cheese," was tho subject of a very able paper written for the Conference by #Ir B. G. Aston, chief chemist, and read by Mr Harkncse. The paper wa6 well packed with tables illustrating tho 6ynthesiß of all the produce of the dairy and laying great stress on the fact that New Zealand butter is the driest butter on tho Home market wid urging 'them to maintain that standard. In conclusion he counselled the New Zealand butter-maker to continue making «n "uniform dry and honest butter." Mr N. Fulton, manager of the Rata FactoTy, read a paper of more than usual interest on a most practical subject : "PasU'lirisation and Distribution of §kirn Milk at Dairy Factories and Creameries." Mt Fulton empliasised tho necessity for pasteurising tho 6kim milk supply as a means of not only preventing the spread- of contagious- diseases, but of saving tlio present creamery sytcm, a tho one great advantage of homo separation, which was at present the greatest danger threatening the industry, waa, that it gave to the dairy farmeT an absolutely clean and uncoutaminafcd milk.
