Research has proved that foods rich in vitamins and minerals give us this protection, yet these foods (especially fruits and vegetables) are very often lacking in the daily diet. This lack L too often noted among the meals of people in the lower income levels.

Fruits are one of our best protective foods, and bananas stand out among them for their Vitamin A and C content. .Bananas are also a good source of Vitamins B and G and have an appreciable quantity of essential minerals Bananas are an inexpensive, labour saving and time-saving food, and they are so good to eat. Good according to modern nutritional standards, good be cause their flavour and texture appeal to the appetite. And they’re so versatile —they fit into the menu all through the day —all through the year. Banana Recipes

Bananas An Gratin: J cup grated cheese, - tablespoon bread or cracker crumbs, 1- teaspoon salt, 6 bananas, peeled and cut crosswise into halves, - 2 tablespoons lemon juice. Method: Mix together the grated cheese, crumbs and salt. Roll bananas in lemon juice and then in cheese mixture. Place in wellgreased baking dish and bake in a moderately hot oven (400 deg.) 15 to 20 minutes or until bananas are done. Serve hot. Makes six large servings. Banana Muffiins: 1 cup sifted flour, \ teaspoon salt, 3 teaspoon soda, 1 teaspoon baking powder, 2 tablespoons sugar, 1 egg, well beaten, 2 tablespoons melted shortening or oil, 2 tablespoons sour milk or buttermilk, 1 cup thinly sliced banana (2 bananas). Method: Sift together flour, salt, sod; baking powder and sugar. Combine the egg, shortening, milk and sliced banana. Stir until banana is broken into small pieces. Combine liquid and dry ingredients, stirring only enough to dampen all the flour. Bake in -veil-greased muffin pans in a moderately hot oven (400 deg.) 30 to 35 minutes. Makes four large or eight small muffins. Banana and Apple Brown Betty: 3 cup sugar, 3 teaspoon salt, i teaspoon cinnamon, 2 apples, 3 bananas, 3 cups small bread cubes, 3 tablespoons butter. Method: Mix together the sugar, salt and cinnamon, (jombine with sliced peeled apples and bananas. Brown the bread cubes in butter. Fill buttered baking dish with alternate layers of bread cubes and fruit, using th - bread for top and bottom layers. Cover dish and bake in a moderate oven (375 deg.) for 30 minutes. Remove cover and bake about 15 minutes longer or until apples are tender. Makes six servings. Banana Loaf:—Method: Cream i pound butter with I cup of sugar. Add 1 egg, beat well.
