AN* IMPOHTAXT PROPOSAL. The f|:ufsti'.m of manufacturing casein is one that is being seriously considered by a number of local cooperative dairy euuinau'cs at the present time, .and there is every prespevt of doiinite action being taken in the matter i-n the near futiiro. Yesterday a number of director of dairy companies from this and t>he districts paid a v:>• it to n-'Mi'hii for the pnr|ms-» of seeing how casein is manufactured, and of ghv.ning «s much information in a </"iieral way in relation thereto a. peissible. the intention 'being. a« far as can be gathered. to start :• co-operative factory in this district. Vor the benefit of those who do not know. it may be t!:at casein is manufactured iskim milk the wliey b -nig returned to the supplier after the casein has been extracted. Tn the \Vangnnui district, wiice this bvo-pro-dust of milk 11n •• been manufactured for some time, a considerable amount of success hrv< been obtained. and it is stated bv farmer* that for the purpose of fattening pigs and calves the whey answers quite as well as the skim milk. Should the proposal bo given effect to each factory will presumably have its own ate plant for the extraction of the ca«ein, wliinb -will ihen be sent to the central dn<rv factory. The nc--essnry building'- and p'ant would cost roughlv about o*2oo. The central factory would of course cost more and should be ere< ted 'as neai' to a railwa<- station ns consistently pcr=sil>!e. X'o o\t:':i labour would bo required at the dairy factories, and the comparatively low cost of manufacture would be fully .justified by the increased profit I'l'at would accrue to the supplied. There is unquestionably a ke°n demand for first grade casein, and if a good ariiolo is turn"d out. hi'.di prices may be anticipated. It has to be borne in mind, however, that as in the case of butter or cheese, tun oh lies in the manufacture «•;:*d an inferior quality can very easily he turned out. An expert at present visiting Xew Zealand states that large quantities are already being manufactured in Sweden and Denmark, and that the farmers there are delighted with the results obtained. It is stated that ft is not essential that all the skim milk should be used, and that in the event of farmers requiring a portion of it they could got back say 50 per cent., sr.d the re.-t in wliey after the casein has Von extracted.
