DANISH BACONERS

Haw The Pigs Are Bred CAREFULLY SELECTED STOCK How did the Danes secure what they term their pure-bred bacon pigs whicli have proved so successful? First by selecting their own crossbred sows. They had a fair length, with shorter legs than the British Large White, and were more after the Wessex or Essex in length and type, states a British farming journal. These sows were crossed with selected Large White boars from England. The Danes next chose the best type of bacon pig out of this cross for their boars, only coming back to the Large White boar when needing fresh blood.

They appeared to select the longest pigs m boars which showed a little shoulder, which was counteracted by length, and obtained the maturing stage, for killing, at five months. The Danes had realised that greatest uniformity could be obtained by early maturity. Their gilts they chose for fineness of bone, fair hams, depth of belly, commensurate with its length, and not too much daylight under the pig. They are generally fed three times per day, and if food was not consumed in 20 to 25 minutes it was taken away. In one authority’s opinion the Wessex or Essex are the nearest to the type desired by Danes.
