TIPS FOR THE HOUSEWIFE. There are many useful little “tips” which are worth knowing about cooking and preparing food. Remember that when frying rashers of “back” bacon the lean often gets hard before the fat is cooked. If the rind from the rashers is laid under the lean in the frving pan the cooking will be even and the bacon beautifully cooked. When peeling apples for salads or tarts, drop the slices into a pan of cold water as soon as they arc cut; this will prevent discolouration. When making a fruit roly-poly use half-flour, half breadcrumbs. This will make a light and casilv-digcsted crust. When boiling eggs for salads put a little salt in the water and the shells will come off easily.
