BILLY SPONGE CAKE. This is an old-fashioned cake that both children and adults enjoy. A country reader who excels in making a good billy sponge cake gives the recipe for others to follow:— Weight of 6 eggs in sugar. Break the eggs on the sugar, and beat for t hour with a wire whisk. Add the weight in flour of 3 eggs, and stir tho flour in, but do not beat. Put in a billy with greased paper at the sides and on the bottom. Cook in the bottom of a slow oven for IJ-2 hours. Tho eggs must be fresh, and also the beating is important.
