SPECIAL “TRIBUNE" RECIPES

FOR CHRISTMAS-TIDE. RELIABLE AND USEFUL HINTS. (By “Stella.”) BREAD SAUCE. (To Eat with Cooked Fowls.) Simmer one small onion in ) pint of milk. Season with a blade of mace, cayenne, and salt. Strain when the onion is quite tender. Put about a teacup of breadcrumbs, without any hard outside pieces, into a clean not, and pour the strained milk over them. Cover, and allow it to soak for about one hour. Add one piece of butter about the size of a walnut. Beat up with a fork and serve very hot. The poultry trimmings may be boiled to make a stock, which can be used instead of -milk, if preferred.

SAGE AND ONION STUFFING. (For Geese and Ducks.? 8 or 4 onions. 9 sage leaves, 1 teaspoon salt, 1 egg, 4 ounces of butter, ) teaspoon pepper. Place the onions in boiling water and boil for about 10 minutes. Scald the sage leaves, chop the onion and sage very fine, and mix with the other ingredients. For poultry the liver may be simmered for a few minutes, chopped fine, and added. PLAIN STUFFING. |lb. beef suet, 2 dessertspoons chopped parsley, 1 egg, 1 breakfast cup breadcrumbs, 4 teaspoon pepper. } teaspoon salt Mince the suet and parsley, mix with crumbs, peppei, and salt. Moisten with a little stock or milk, and bind with a beaten egg. APPLE SAUCE. (For Poultry.) Peel and core 5 or 6 apples, and stew till reduced to a pulp. Add just sufficient water to moisten them, and one tablespoon of sugar. A small piece of butter may be added.

To cook poultry clean the bird, stuff, and truss. Then flour it, and place- it in the baking dish with plenty of dripping. Lay slices of bacon on the breast to flavour the bird and keep the flesh moist. Baste well, and if the bird is too brown before it is done then put buttered paper over the top of it. ,A CHEAP HOLIDAY MOULD. Buy 3 or 4 IBs. corned beef brisket, not fat Place it in cold water and bring ft the boil. Boil gently from three to four hours. Then put the hot meat in a basin, put a sancer on top of it. nnd weights on. top of the saucer. Leave overnight in the safe. When turned out of the basin next day, it will be a good little cold pressed mould, delicious and tender, to eat with lettuce salad.
