HASTINGS DAIRY FACTORY.
Sir, — At last oar loog-talked-of dairy factory is an accomplished fact. I bad a look round a few days ago, and everything appeared to be woll-airanged, and all was beautifully oloau, as indeed a dairy must be to ha a syicce&s. Them was some batter there which looked and tasted good. I asked the manager if he was doing well, and he said they wanted more milk. Now, sir, my object in writing is to ask why the company do not run a cart to take the settlers' milk to the dairy and to return the skim-milk. Of course the answer will be on account) oi the extra expense. There is no doubt that it would be some extra expense, bat I feel assured that that would be more than corered by the extra milk received and batter made. la and around Hastings there are small settlers who mostly have a few cows, bat they cannot afford to send their milk, whereas, if it could be taken for them many— l think I may say most of them — would only be too glad to send their milk, for there is no doubt it wonld pay them better to do so. I for one wonld send ten gallons of new, good milk. For the last two months I made 1461 bof butter, and the extractor wonld get more cieara than I can by the old-fashioned Bkimmiqg, and I would get more cows. It could easily be proved whether the extra expense ohonld be incnrred by sending out a notice through your columns for all who would send their milk to send word to the manager, stating now much each wonld tend. I hope the venture may turn out a success for there is no doubt it would be a good thing for the small farmeis. I must apologise for taking up so much of your space, but; as ib is a matter of
general Interest, I trust you will excua me.— l am. &c, Faemer's Wife. Hastlags, November 17, 1593.
