H. Manners Sutton, Governor of Victoria, stating that, according to present arrangements, H.B-.H. Prince Alfred would arrive at Port Jackson on the 14th January, and that he proposes to take his final departure from Sydney on the Ist March. Between these dates his Royal Highness purposed to devote eleven days to a visit to Queensland, including the time occupied in the voyage thither and back.. H.B.H. will leave Melbourne for Hobart Town on the 28th December . ; — Sydney Herald, December 10. Meat Cueing- by Infilteation.— The editor of the Corpus Christi (Texas) Advertiser gives a long and interesting account of the new process of curing beef by infiltration, as seen under his own eyes. If this , new method succeeds — and the men who have taken hold of it never fai] in anything they undertake — the result will be of immense benefit to the stock-raising-interests of the Nueces region, and to the whole State of Texas for that matter. We copy the account of the firs* day's work entire : — Per invitation oJ Mr. Turner, we were "in at the death ' of the first beef at the ISTueces beef-pack-ing establishment, on "Wednesday morning last. Quite a crowd of visitors, attracted by curiosity, were present to witness the novel.operation of curing beef by infiltration. A fine fat bullock had beer selected, and when we arrived the workmen had already, performed the knockdown operations The beef was upor his back, and a saw was cutting its way through the brisket, to enable the operator to get at-the heart. This done an incision was then made in the right yen tricle of the heart, and a small hose pipe inserted. It may be necessary to stat< that to the pipe was attached a rubbej hose, and by tracing the hose about ter feet in the direction of the building, it ter minated in the bottom of a barrel of brine hoisted there by means of a windlass. The pipe was inserted full length, entering th< jugular vein, and then secured by a strong cord. The brine was then turned on, am the process of infiltration then commenced The^first incision in the right ventricle o the; heart was closed by a clamp. W< watched patiently to see the effect. Sooi . the carcase became stiff, rigid, and coolec rapidly.- Mr. Turner, by a dexterous an< skilful operation, amputated about an mc] of tail. 7 ; Instead of blood, brine spirtei out with force.
