Samples of meat frozen by a new process, and put up in little cartoons, were recently inspected by experts in Sydney. These samples may portend a," revolution in the methods of the butchery trade. Ox and sheep kidneys, fillet of fish, sheep brains, mutton and pork chops, steak, and calf’s liver were preserved under the “Z” process at the Liverpool Refrigerating Company’s establishment, Fleetwood, England, on 16th December last. They were then stored at the Cambridge Low Temperature Research Station. On March 6, wrapped in celophnne paper, and packed in cartoons, . they were -shipped aboard the R.ALS.. Alaloja, and carried, at a temperature between 4 and 6 degrees Fahrenheit, to Austra'ia. On arrival in Melbourne, they were inspected by experts in the ex-i'l-t trade, and their quality as .food proved quite satisfactory.
