NEW ZEALAND CHEESE

Sir, —It was with considerable pleasure that I read the leader in today’s "Star” on the above subject. As one who knows something of the people and their tastes at Home, the resolution adopted by the Taranaki Dairy Federation is, in my opinion, the best that I have come across during the long discussions on cheese qualities. The preference in certain districts at Home for coloLired cheese and in other districts for white cheese is quite true. Offer them good matured New (Zealand cheese of tue right colour and they will buy it. May I mention that the people at Home (at least in the large towns) have the choice of many brands, such as Cheshire, Cheddar, Stilton, Wensleydale, Gloucester, etc., together with foreign makes of Dutch, American, Canadian, Gruyere, Rochefort, Gorgonzola, etc. ,all of good quality, and it is against such competition that New Zealand eheesiT’must, at least, hold its own if it means to keep that big market. Incidentally, Mr Editor, \iow is it that New Zealand che'ese as supplied on the oversea ships to Home is very good (as certified by passengers), but is practically unobtainable in New Zealand shops?
