DAIRY PRODUCE.

A GOOD DEMAND AND A STEADY MARKET. The steady position of the dairy produce market disclosed in the latest cable advices from Home show that the general conditions are such as to practically assure a good return to the dairy farmer for the season. The last cable from Messrs H. A. Lane and Co., Ltd., reads: “New Zealand cheese, coloured 104 s, white 107 s; market steady.” This price is a trifle down on last week’s, but is still good. A little variation with the new arrivals in London has always been experienced. The butter prices have been advised recently as good and firm. The question of colour is very interesting, and experience has shown that this is generally a question of the taste of the people in certain localities. Records showed that about twothirds of the demand, was for white and one-third for colour. That was where the science of marketing came in, and the local knowledge of the wholesalers was worth much to the producers.
