OUR INVALID RECIPES.
When a patient needs feeding up with ordinary diet, try surprises! These, tire always a success. Artichoke Soup.—lib artichokes, Spit. water or rather" more, 1 gill milk, 1 tablespoonful cream, salt and -pepper. Peel the artichokes after scrubbing, and keep in cold water, salted. * Be sure the artichokes are covered with water, put on the lid, and cook till tender—about twenty minutes. Pass through a sieve. Take 1 gill of the liquid, add .1. gill or rather less of milk, bring to the boil, stir in 1 small teaspoonful of cornflour blended with cold milk, boil for 3 minutes. Add the cream just before serving.,
Parmesan Balls. —t white of egg, loz Parmesan cheese, tiny pinch salt, grain of pepper, frying fat. Whisk the egg; very carefully add the grated cheese, pepper, and salt. Be careful to keep iit light. Shape the mixture into balls, using as little flour as possible. Put the balls with an iron spoon into hot fat—not too hot; it must not quite smoke. If they float pour fait, over them. They axe done when firm all over to the touch. Drain for a moment on tissue paper before serving. Steamed Custard.—l gill milk, 1 egg or 2 yolks, 1 teaspoonful sugar, tiny pinch of salt, flavouring. Beat the egg, pour the milk on to it, strain into a. well-buttered basin', add the sugar and 'salt. Tie a greased paper on top, and stand in a stewpan with sufficient boiling water to come half-way up the basin. On no account must it steam fast, or it will be holy and watery. Steam for 30 minutes. Let it stand a. moment before turning it out or iit will break.
