(-•’ Sir,—ln your Saturday’s “Star’’ “Quality” says that, “according to Mr Veale’s report the Holstein breed produces the most cheese.” I have gone carefully through the report, but I cannot find .substantiations for such a finding. We have it definitely from Mr Veal/e that the Jersey produces the most Casein as well as the most fat per gallon of milk. Also it is generally recognised that, while the Friesian can produce more milk per'cow, she cannot produce- more milk per acre. Then how can the Friesian as a breed produce more cheese than the Jersey? Yet Mr Veale claims that we are losing, possibly £1,000,000 by not adopting the Friesianis! Whv? —I am, etc., H. D.
