DAIRY PRODUCE, PRODUCTION. The figures of the dairy division of the Department of Agriculture show that the salted butter graded for May, 1928, were- 3121 tons, and the unsalted Si) tons, a total of 3201 tons, compared with 3195 ton salted and 55 tons unsalted, a total of 3250 tons for May, 1927; a. decrease of 1.5 per cent. For the ten months ended May, 1928, the respective quantities were 69,321 tons and 3098 tons, a total of 72,419 tons compared with 67,450 tons and 2248 tons, a total of 69,706 tons for the corresponding iperi-od of the .preceding season, an increase of 3.8 per cent. The cheese graded for May, 1928. comprised ; white- 3212 tons, i coloured 1556 tons, -a total of 4768 tons? compared with 2549 tons white and 1499 tons cdloured, a total of 4048 tons or May, 1927, an increase of. 17.7 per cent. The quantities for the ten months ended May, 192 S were; white 47,903 tons, colouered 25502 tons, a total of 73,485 tons, compared with 49,54-5 tons white and 25,020 tons coloured, a total of 74,565 tons, for the corresponding period of the preceding season, a decrease of 1.4 per cent. Converting these figure® into- butterfat epuivalent there is an increase of 2.12 per cent in butter fat production for the ten months as compared with the corresponding period of the preceding season. Stocks held in the various grading ports ns at 31-st May, 1928, were: Butter 4384 tons, cheese 4280 tons, as compared with 8710 tons butter and 9431 tons cheese held on 31st May, 1927.
