BEEF SAUTE.
Remove all the lean meat from the remains of a joint ol roast beef and cut it into' small pieces. Slice two onions ami fry them in a little butter for eight minutes. Add the beef, season with salt, white pepper and saltspoouful of grated nutmeg. Toss well while cooking for five minutes; add one tablespoonul of vinegar, one tablespoonful of Worcester sauce, and a gill of tomato sauce; thoroughly mix and add one teaspoonful of chopped parsley; mix again, and cook slowly for 20 minutes.
