VANILLA CARAMELS.

Vanilla caramels arc quite wholesome for children, with whom they are favourite sweetmeats. Here is a reliable recipe: Place four eupsful of granulated sugar in an enamelled pan, add 3 tablespoonsful of glucose and a cupful of boiling water. Allow the mixture to boil, stirring all the time, until it will harden like toffee when dropped in cold water. Add immediately a cupful of cream and a piece of butter the size of an egg. Allow to boil again, stirring all the time, until it' will snap when dropped in water; flavour with vanilla and remove from fire. Pour on to a slab or dripping tin and, when nearly cold, cut into small squares. When quite cold wrap caramels in wax-paper and store in an air-tight tin.
